OIL OLIVES

The olives for Oil production are mechanically harvest. A modern Tornado shaker is used to harvest our oil olive trees. The inverted umbrella ensures no contamination of the olives will occur along the harvesting process. In the shaking process the olives falling into the umbrella and from there directly into a clean cavity of the harvester.

Once this cavity is full the olives are emptied into ready stand by olive picking bins.
Within hours the olives will be transported to the processing shed for oil extraction.

OIL PROCESSING PLANT

A modern 1ton per hour processing plant is an integral part of our philosophy to produce all products on our farm. This means short times between harvest and processing. All steps from the fruit on the tree to the oil in the bottle are under our control.

We make sure you can enjoy a fruity, well flavored extra virgin olive oil with all the goodness nature can produce. The high quality of our process will maximize the shelf life of the oil.

TABLE OLIVES

All olives for table olive production are manually harvested and selected for the right size ripeness, colour and checked for any damage. Within hours the table olives have started the pickling process

PICKLING PRODUCTION

Saluté Oliva is using the latest In-O-Vat pickling bins. These bins have been specially designed for pickling green or black olives. These pickling bins optimises the fermentation process, improve consistency of the product and incorporates an aeration system.

The Green Manzanillo olives as well as the black Kalamata olives are pickled using the In-O-Vat pickling bins.

Our speciality the Semi Dried olives are picked at the end of the season when they are very ripe, placed into perforated bins with salt and carefully monitored until the aromas and bitterness are in balance.

PACKING OF PICKLED OLIVES

All pickled olives are packed in EVOO in our specifically design commercial kitchen. A vacuum packing machine packs and seals the pouches and produces an easy to handle, convenient package of olives with a long shelf life without need for cooling.

FILLING SERVICES

A modern filling station suitable for filling bottles and casks of various sizes has been installed in mid 2007. Are you looking for contract filling?
